I love cheesecake and keto cheesecake is just as good and satisfies the cravings.

I make my own coconut milk yogurt. Easy, bring to a boil, add plain gelatin, let cool down to add culture (I use a small tub of Coyo plain), place in a an electric yogurt maker for 12 hours. When removing from maker I add stevia to sweeten, then put in jars into the fridge. It thickens up nice, like greek yogurt. Much cheaper than the store bought Coyo.

Therefore, you can eat up to a half cup of plain yogurt, buttermilk, or kefir and only count 2 grams of carbohydrates (Dr. Goldberg has measured this in his own laboratory.) One cup will contain about 4 grams of carbohydrates. Daily consumption colonizes the intestine with these bacteria to handle small amounts of lactose in yogurt (or even sugar-free ice cream later.) “

This cheesecake is in the oven baking as we speak. I did use crushed pecans with some cinnamon added along with your other ingredients. When trying to shift from a high carb diet to a ketogenic diet, cravings can definitely get strong. It’s always best to try to clean house before you start so that you don’t have food around you that can lead to cravings. We recommend that when switching to keto, you restrict using sweeteners completely for the first 30 days. It normally leads to breaking sugar addiction and ultimately not having cravings.

Hi Jewell, Thank you for clarifying. Sorry to hear it was bitter! I’ve never experienced that before, either. Just the opposite, people often comment that this tastes just like a “regular” (not low carb or gluten-free) cheesecake. 🙂 I’m not sure where the bitterness would come from. What sweetener did you use, and did that taste bitter to you at all? Powdered erythritol doesn’t usually have any bitterness, but stevia does tend to have a bitter aftertaste (which is stronger in some brands).
On your keto food list, stick to low-glycemic sweeteners to avoid spikes in blood sugar, and avoid fillers and binders such as maltodextrin and dextrose, which can spike blood sugar and contain sneaky carbs. Sugar alcohols such as maltitol or xylitol may read as no sugar on a label, but be aware that they will still cause moderate glycemic response when digested.

I just made this for a birthday celebration. Absolutely fantastic! I had fresh limes and substituted for the lemon juice. It was so creamy and delicious 🙂 Even the sugar lovers were surprised at how great it was, couldn’t tell it was low carb. The next time I make this, it will get a topping of sweetened (Swerve confectioners) sour cream with zest mixed in. I can’t thank you enough for this recipe!

I didn’t soften the cream cheese enough was a bit hard to mix with hand mixer at the beginning should I try and soften it in processor before starting?

Planning on making them again sometime because they seriously taste amazing and were pretty easy, just sucks because I was making these for graduation and made 2.5 dozen and none turned out right 🙁

Low-carb cheesecake can fill the void and let you enjoy your eating plan instead of missing out. This cheesecake is very, very rich, so you will probably find a small piece will satisfy your need for dessert. You can use toppings if you want to, but the plain vanilla taste is great as it is!

Why Greek yogurt? Well, if you are not on an absolutely zero-carb diet and don’t mind some dairy, either, you must admit that Greek yogurt is one of the most enjoyable snacks out there. Moreover, it is supposed to be full of the good little guys that help the gut remain healthy. Other than that, it is a soft and fluffy alternative to cream cheese.
