Just wanted to say thank you! I followed this recipe and if you would’ve served me this at a restaurant I wouldn’t know the difference between this and regular cheesecake! Some minor changes I did only because of the ingredients I had available were to use coconut flour vs almond flour, stevia packs (converted) vs. erythritol for both crust and batter, and just a small amount of almond milk to get the right consistency for the crust. For anyone who may need it, for every cup of almond flour I substituted 1/4 cup (or 2 ounces weighed) of coconut flour. Along with the almond milk, I increased the amount of butter used by about 1 tbsp since coconut flour really sucks up moisture. After that, I followed everything else listed including directions and was not disappointed. Although I used an incorrect pan type(only 2inch high 9inch solid baking pan) so I wasn’t the prettiest cheesecake, it was still delicious which is honestly all I cared about. I might also add that this is the first time I’ve ever baked cheesecake (or any type of baking) of any type, so for anyone who might think it’s difficult, give it a try!
Meat – Unprocessed meats are low carb and keto-friendly, and organic and grass-fed meat might be even healthier. But remember that keto is a high-fat diet, not high protein, so you don’t need huge amounts of meat. These taste so freaking good. I used this filling and the crust/baking directions from the pina colada cheesecake cupcake recipe. The only thing I would change is to make sure to include directions to beat the eggs into the cream cheese/sweetener mixture on the lowest speed to avoid getting air bubbles in there!!! I beat them too fast and ended up with cheesecakes that puffed way up in the oven and the deflated when they cooled and it made the texture a little off. Planning on making them again sometime because they seriously taste amazing and were pretty easy, just sucks because I was making these for graduation and made 2.5 dozen and none turned out right 🙁

They soak up flavors and add a meaty texture to dishes, they contain very little carb so can be enjoyed in abundance on keto. 

There are a few factors that can contribute to falling. Make sure you use a low speed when beating in the eggs, lemon juice, and vanilla, and for the eggs do them one at a time. Too much air in the batter can cause the cheesecake to fall at the end. You can also reduce the chances of falling by bringing all the ingredients to room temperature before you start, and baking in a water bath. This isn’t required (and I tend to skip the water bath for convenience), but it can help!
Maya, OMG this was soooo delicious! My hubby was so impressed he said we need to keep it around all the time…I was thinking I need to make it more often so I can perfect it (wink, wink). I did buy a sugar free raspberry jam for the topping because I couldn’t “find” your recipe, then I read the entire recipe all the way through and VIOLA there it was. I’ll make that one next time.
One thing to keep in mind: If it's whipped cream you're after (and not whipping cream, to add to your coffee), it might be best to, uh, whip it up yourself (one cup of the whipped stuff has under four grams of carbs and just over 43 grams of fat), since most store-bought versions have added sugar. To do that, all you need is heavy whipping cream, a hand mixer and a mixing bowl, and you whisk until the cream becomes fluffy. Add a pinch of pure vanilla extract for some flavor.
Hi Justin, I’m glad you liked the cheesecake! This definitely doesn’t have 18g net carbs per slice – you can see that even at a glance since all the ingredients are very low carb (almond flour, cream cheese, eggs, erythritol, etc.) The nutrition label included below the recipe card shows the nutrition breakdown per slice. In MyFitnessPal, did you set the number of servings for the recipe to 16? If it was set to something else, that could be one reason for the number to be significantly off like that.

Weight gain of one pound can be due to any number of factors, including water weight, bathroom habits, what else you ate, etc. I wouldn’t read too much into it unless you are seeing a trend. You can definitely store the cheesecake in the fridge or freezer. In the fridge it will last about as long as your cream cheese would last, and many months in the freezer as long as it’s wrapped well.

If your diet is high in carbs, then your body will produce plenty of glucose, which is derived from the carbohydrates and used as an energy source, and insulin, which helps to transport the glucose around your body. In this case, the body will prefer the glucose as an energy source and ignore other alternatives, such as fats. The fats will be stored in fatty tissues in your body and contribute to your weight gain.
