I only wish I could make a crust a bit.. crustier? I’ve had a lot of these types of deserts with the mostly-almond-flour crusts, and they always have a bit of a texture issue. No real crunch. But I will experiment. I once made applie pie crumb topping with almond flour, butter, Erythritol and cinnamon, with a little coconut flour, and baked it in a pan, then crumbled it up. I had a lot more Erythritol in that though, and it got “crispy”. Might try a variation on that for this next time.

Peanuts are technically a legume, not a nut. However, I find them to be a delicious keto snack, especially peanut butter. Peanut butter is one of the easiest things for me to overconsume, personally. The carb count of peanuts is on the higher end, so it’s important to watch the serving size if your goal is to stick to keto. My suggestion is to always measure out a serving of peanuts or peanut butter before consuming.
Believe it or not, though, there are some fruits you can still incorporate into a keto meal plan with a little strategy. “In order to stay in the altered metabolic state of ketosis, most people will only be able to consume 20 to 50 grams of net carbs per day,” says Ginger Hultin, R.D., spokesperson for the Academy of Nutrition and Dietetics. That means you’ll have to carefully portion out and track your fruit intake to make sure it fits into your total carb allowance for the day. “An apple, for example, contains about 20 grams of net carbs, so eating just one could max out all of your carbohydrates for the day,” she explains.
Rounding errors are common for cream cheese. Most nutrition labels, including products at the store, round up or down to the nearest whole amount of carbs, but the serving is only an ounce. If you’re on keto and have a sweet tooth, keep this sweetener out of reach. Artificial sweeteners have no place in a clean keto diet like Bulletproof, for several reasons. A recent study in rats found that sucralose does not pass through the body undigested as previously thought. They also found that it showed up in rats’ fat deposits two weeks after the animals had stopped eating it, raising concerns about safety. Other research shows the low-carb sweetener wreaks havoc on your gut, worsening inflammation in people with conditions like Crohn’s disease. Besides, if you’re using the non-pure version of sucralose (e.g. Splenda), it’s loaded with fillers that skyrocket its glycemic index up to about 80 — that’s higher than sugar.
If your diet is high in carbs, then your body will produce plenty of glucose, which is derived from the carbohydrates and used as an energy source, and insulin, which helps to transport the glucose around your body. In this case, the body will prefer the glucose as an energy source and ignore other alternatives, such as fats. The fats will be stored in fatty tissues in your body and contribute to your weight gain.
I am talking, of course, about Liberté Méditerranée 9 percent yogurt, a cultured dairy product so delicious that I’ve thought of its richness every single day since I ate it on vacation in 2015. Why Greek yogurt? Well, if you are not on an absolutely zero-carb diet and don’t mind some dairy, either, you must admit that Greek yogurt is one of the most enjoyable snacks out there. Moreover, it is supposed to be full of the good little guys that help the gut remain healthy. Other than that, it is a soft and fluffy alternative to cream cheese. While I don’t mind the cheese, I do find it can mess with me if I eat too much of it. Besides, I’ve seen people complaining they hated cream cheese pancakes and wanted an alternative. Hopefully, this recipe comes in handy for some of them.
Note this: When it comes to keto-approved foods, you don't have to spend an arm and a leg. Yes, it's suggested your meats are either grass-fed or cage-free and your seafood wild-caught. For produce, organic is recommended. That said, you will not mess up your chances of achieving ketosis by purchasing farmed or non-organic foods. Do what best fits your budget and goals.
Time to address the elephant in the room. Rhubarb is not a fruit. Or at least, rhubarb fails the eye test at first glance. It looks like red celery. When raw, it feels like celery. Hard, bitter, fibrous, and about as enjoyable as a spoonful of cough syrup. Except, that’s not rhubarb at all. Rhubarb measures like a vegetable but tastes like a fruit. It cooks like a fruit and fits the sweet profile you may be craving on a Tuesday night. Reduce 4 ounces of chopped rhubarb with 4 ounces of strawberries, and you have sweet fruit topping that barely skims 9 grams of net carbs, or roughly 4.5 net carbs per serving.
Hi do you boil the heavy whipping cream 1st? I make SCD yogurt. specific carbohydrate diet.. and I add my own cultures which requires you to 1st boil the milk To kill off any bad bacterias then let it cool and add powdered enzymes then let it ferment for 24 hours so the enzymes can eat all the lactose making it lactose free. I was thinking of using whipping cream instead of milk but wasn’t sure about the boiling process?
This cheesecake is the best. It is fluffy, like Boston cheesecake, and then settles down after few days in the fridge to be a dense New York version. In my hands your coconut pie crust was the best option for this cheesecake. The almond flour one was a bit mealy and my family members did not like it as much. Some toasted almonds on top gave it a nice crunch. ( yes, you guessed it, I made three versions and the sour cream one as well 🙂
Oh my god, they are freaking delish. I had to bake for 20 mins instead and theyre still pretty crumbly but the best thing I’ve made on Keto. I was so sure they’d taste weird because of the almond flour but they taste seriously great. Wouldn’t be bad to have a coconut version and instead of raspberry, just use cocoa powder in either the cookie or the cream cheese.
