Keto is a lot more than a big pile of bacon – you don’t even need to eat meat at every meal to get enough protein for keto. Eggs are a great staple protein source, and low-carb dairy foods like cheese can give you a boost in the protein department. My only minor issue was that the cream cheese didn’t seem to get smooth after blending and so after the cake sat and we ate it, you could taste the crumbles of cream cheese. When I started to bend the mixture (using hand mixer) I started off slow, then sped up the speed thinking that would help remove the clumps. But then I saw your note about not over-mixing because that would cause air pockets. I continued to blend but at a lower speed then just put it in the pan to bake..thinking maybe the clumps would sort themselves out while baking. What do you recommend for next time? Either way, it was fabulous! Thank you!!!

How can you promise that when everything seems to need to be handmade? That is either a major time commitment, shopping, prepping, cooking, cleaning, or the most basic-bland thing ever. Hi Dorothy, The ingredients don’t scale perfectly to a 6-inch pie, but can be pretty close. If you enter “10” in the box that lists the number of servings, it will convert the amounts for you. Some amounts turn out a little odd (like 1.88 eggs), so with those it should be ok to round up. The baking time will need to decrease with a smaller cheesecake, as well.

Nuts are commonly used in baking ketogenic desserts. For example, almond flour and coconut flour are often used as a substitute for regular flour in baked goods. If you are using nut flour to replace regular flour, make sure you know the correct substitution ratio. Best thing to do for your cheesecake not to crack. Turn off the oven just when it’s still almost slight done. turn off the heat and leave in the oven for an hour. But DO NOT open the door at all. The residual heat will cook the rest and you won’t run the risk of overcooking and it’ll cool at the same time. Then take out of the oven to cool completely and refrigerate. I love cheesecake and keto cheesecake is just as good and satisfies the cravings.
Hi! I’ve tried a few of your recipes and so far I love them all! Question- I want to make this cheesecake soon but I have powdered monk fruit, would it be the same ratio as powdered erythritol? I’ve only ever used powdered monk fruit once because it was super sweet so just wondering 🙂 I looked at your chart but could not find if there was a conversion for it.
Hi Kathryn, Erythritol works differently than sorbitol. Erythritol gets absorbed in the small intestine but poorly metabolized. Sorbitol does not get absorbed and passes to the large intestine where it causes stomach discomfort and gastrointestinal issues. So, most people don’t have that issue with erythritol. Monk fruit would not increase net carbs so you could use either one, but the powdered version does have erythritol in it also.

Thank you for posting usable lists but how does one know what the limits are for the dietary requirements? Back in the day, you would have a number set for calorie, carbs, fat grams, etc limits that you would strive to follow each day. I see all kind of recipes that lists content for following the Keto method but I don’t know how to apply the information in a usable way. Am I missing something?
These were super yummy!!! I used Mexican Style Shredded Cheese by Kroger which has less than 1 gram of carbs and 100 calories per ounce. My daughter and I each had 1 taco. She loved it! We both loved how much more flavor there was than regular tacos shells. I’m thinking about using this as a crust for pizza, too! Cheese crust! Yum! Thank you for this recipe!!!

Hi do you boil the heavy whipping cream 1st? I make SCD yogurt. specific carbohydrate diet.. and I add my own cultures which requires you to 1st boil the milk To kill off any bad bacterias then let it cool and add powdered enzymes then let it ferment for 24 hours so the enzymes can eat all the lactose making it lactose free. I was thinking of using whipping cream instead of milk but wasn’t sure about the boiling process?
