Hi Nanette, For this recipe I recommend a granulated sweetener in the crust and either powdered erythritol or powdered monk fruit in the filling. Pure stevia extract would be very concentrated and may change the end result. A stevia blend may work but the amount would vary depending on which one it is and what else is in it. You can check my sweetener conversion chart which can help if you look up the type you are using.
If you like smoothies but don’t fancy the banana-based ones as they can contain extra sugars, then a coconut yogurt-based one can solve the problem! With the natural sweetness of the berries, this drink makes a fresh and fruity start to the day or a lovely refreshing Paleo-friendly snack. So all those great minerals I mentioned above that many nuts contain may be difficult for you to absorb. However, soaking and roasting nuts may reduce the phytic acid content in nuts dramatically. So, if you eat soaked, sprouted or roasted nuts, then this might not be a big problem for you. If you find nuts hard to digest, then this could be due to their high phytic acid content, and soaking nuts before eating them can help make nuts easier to digest and reduce your discomfort when eating them.

The problem with some meats when you’re on Keto is that they are too lean. That means, even though it’s low in carbs, some meat has too much protein and not enough fat. Here’s a nutritional list of some of the more commonly consumed vegetables on keto. Keep in mind that the weights are the same of everything listed so that it will impact the skew of the carb counts. For example, in a meal you may have 6 oz. of broccoli in the side, but you would not have 6 oz. worth of berries in the morning. You may mix 6 oz. of berries into a pudding with 4 servings.

We are on a low carb diet but my Husband loves Cheese Cake. Since it’s just the two of us I didn’t want to make such a large pie; so I cut the recipe in half (using 2 eggs) and used a 9″ Pyrex pie pan. I cooked it at 300 for 40 mins and it turned out perfect. We do live at almost 5K feet.) The only thing I would do different is add more powdered erythritol to the filling to suit our taste (everyone is different). Every night we have a slice and my Husband keeps telling me how good it is. Using the product labels of what I have on hand I came out with 6.25 net carbs per 1/8th of my pie pan. Individuals with type-2 diabetes have especially found to have major health benefits from the consumption of this compound in foods like shirataki noodles. Although glucose levels elevated following a meal with glucomannan, studies show that insulin levels in type-2 diabetics is not significantly impacted. (36, 37)  I use these shiratki noodles on a regular basis.  This is one of the best foods to eat on a ketogenic diet.

Strawberries have also been found to improve blood sugar levels, reduce insulin levels, increase insulin sensitivity when compared to groups that did not consume berries. This suggests that the combination of consuming strawberries and following the keto diet may have particularly profound effects for those with type 2 diabetes and insulin resistance.


Another thing worth noting is that there are three main types of carbohydrates: starches, sugars, and fiber. Of these three, sugars spike blood glucose levels the most, while fiber has no direct effect whatsoever. Fruit being particularly high in sugar is the most problematic plant food for keto. But if you plan your diet right, fruit can and should be part of your keto journey.
