I am slightly (?) confused—in the article you use phrases such as “the low carb yogurt theory”–it can be assumed–expect approximately–The actual number of carbs has been proven– Theory, assumed, expect, and “has been proven” just seem to be at odds with each other…I’ve given up Yogurt while on a keto diet and miss it. So easy to make! I used powdered monkfruit sweetener instead of the Erythritol. Just took it out from the oven, no cracks and is jiggly like it should be but it browned a bit on top. It also rose a lot so I am sure I overmixed it. It’s cooling on the counter right now before going in the fridge can’t wait to try it tomorrow. Hi Kathy, Just confirming that even pure erythritol doesn’t work for you? Often times it’s other things in erythritol blends that cause issues, like oligosaccharides, for example. Unfortunately I haven’t tested this recipe without a powdered sweetener, so if you try something super concentrated like stevia, I’m not sure how it would work out. Hi Sean, peanuts are legumes. Firstly, although they are relatively low in carbs, peanuts contain lectins and phytates which makes them hard to digest. Also, legumes in general have been linked to leaky gut syndrome, PCOS, IBS and Hashimoto's. Having said that, many people eat peanuts when following a keto diet and experience none of these issues. You have to try what works best for you.
Although excellent sources of fat, nuts add up quickly in protein and carbs, and are often inflammatory. Snack on fattier nuts such as macadamia nuts and pecans, but limit those high in inflammatory omega-6s, like peanuts and sunflower seeds. Only use nut flours (almond, coconut) in moderation, as they are packed with protein. To stay in ketosis, limit high-carb nuts like cashews, pistachios and chestnuts, and avoid most beans.
According to Kathy McManus, director of the Department of Nutrition at Harvard-affiliated Brigham and Women's Hospital, fruit juices and other from-concentrate products can increase your blood sugar and your calorie consumption. This means that juices are very keto unfriendly. You also want to be careful about making your own juice at home, even from vegetables. Juicing your fruits and vegetables concentrates the carbs and sugar and may be too much on your low-carb diet.
Hi Justin, I’m glad you liked the cheesecake! This definitely doesn’t have 18g net carbs per slice – you can see that even at a glance since all the ingredients are very low carb (almond flour, cream cheese, eggs, erythritol, etc.) The nutrition label included below the recipe card shows the nutrition breakdown per slice. In MyFitnessPal, did you set the number of servings for the recipe to 16? If it was set to something else, that could be one reason for the number to be significantly off like that.
Transfer the silicone mat to a large baking sheet. Bake 20 to 30 minutes, until golden brown and the edges are beginning to crisp up, then turn off the oven and let the crackers remain inside. If the edge pieces are browning too fast, simply remove them and let the remaining crackers sit in the warm oven until firm to the touch. They will continue to crisp up as they cool.
